In no particular order:
Gundam Wing + Endless Waltz
Gundam 08th MS Team
Blue Sub Six
Ghost in the Shell
Dragonball Z Abridged
Mobile Suit Gundam Abridged
Sailor Moon Abridged
[I'm not recommending these Abridged series because I think the original anime is good, so if that's why you don't want to watch them, your argument is invalid]

that's a long list
from recent memories, i really liked Fate Zero. it felt more mature than average anime, and it has great animation and story.
edit: i think LivingNexus's recommendations are good. many classics there.

It's a newer one and a bit slow, but it has a lot of interesting twists to it and just finished so all the episodes are up.

These are not really the type of anime that you normally watch, scanned through the list and the general feel was they are mostly action anime, but anyway I like these a lot.
Ef - A Tale of Memories
Ef - A Tale of Melodies
Clannad (and Clannad: After Story; I felt the 1st series was better though)
Ano Hi Mita Hana no Namae o Bokutachi wa Mada Shiranai (anohana for short lol)
Ano Natsu de Matteru
These seem more your type:
Katekyou Hitman Reborn
Gundam Seed (and Gundam Seed Destiny)
Senhime Zesshou Symphogear (I'm actually in it only for the soundtracks XD)
Sorry if I'm jumping to (the wrong) conclusions regarding your taste in anime haha

I don't watch much anime (Not anymore at least) but two anime that I have watched recently are:
1. Higurashi no naku koro ni, (First series, kai and rei. Don't bother with Kira. It's a piece of Waffle.)
Higurashi probably isn't for everyone though. It's pretty gory (Well al east the first season is. Kai and rei, not so much.) so it might not be for everyone and it doesn't really do a good job of explaining anything until Kai but regardless I consider this one of my favorite anime ever.
2. Mobile suit Gundam Unicorn
I haven't watched any of the other Gundam series, so I don't know how well this would compare to the others, but from what I've seen, I've liked it pretty well despite some flaws. 7 Episodes total (6 released) all about an hour long and the dubbing is superb in my opinion. A fair bit of warning though. They take their sweet time releasing episodes. Ep 1 came out around march 2010 and Ep 6 just came out about 3 weeks ago. We probably won't get 7 until spring 2014 if we're lucky.

from the creator of Cowboy Bebop.
I'm surprised Cowboy Bebop wasn't on your list. One of the best anime I've seen.

I honestly commend my favorite anime of all time
'Ano hi mita hana no namae wo bokutachi wa mada shiranai' or 'Anohana' for short.
Also, if you'd like a really fun comedy anime.
I recommend with my whole heart 'Daily Lives of Highschool Boys'

only listing names of anime doesn't always help.
if you just pick a random name it doesn't mean everyone will like it.
it will be better to make recommendations or list them in their own genre (tag) this way it's a lot easier to search.

Out of all listed Samurai Champloo is probably the only one I didn't see.
(which someone listed) I saw some time ago, and from my memories it was pretty funny. It was a magic comedy anime.
pure epicness if you like vampire animes. The OVA that they finished not that long ago was dark, and kept some of the dark humor(and occasional off the wall gag that doesn't seem to fit the style). Side note you don't need to have watched the series to understand the OVA as the 1st 2 OVAs(I think it was the 1st 2) were pretty much a summery of the tv show
Slapstick magic anime where the main character causes more destruction then the evil she destroys
Seriously the main char has a spell that is able to level an entire city which she whips out whenever she gets pissed(which is VERY often).
Yu Yu hakusho...
I remember falling asleep ALOT during this. It started out interesting, but after 25 eps it became a stale shonen I MUST GET STRONGER TO WIN THE NEXT TOURNAMENT type anime that kept repeating the same tournament plot over and over till it ended. Wish I never bought it on DVD (couldn't find anyplace to try it 1st)
recommend if you seen a LOT of anime, know a fair bit about japanese culture, and love slapstick parody animes that could potentially cause you to have shortness of breath due to laughing too damn hard. I tried writing an explanation of it, but the thing is all over the place, and takes place around the Meiji period. Just think Meiji period, and instead of americans UFO's came, and took over japan, shinsengumi in police cars along with robots, alien cat girls, and giant dogs running around, etc (at one point they have gundams, and darth vader in it just to point out how goofy it got
nice show that was commonly compared to gintama, but outside the basis of what the main chars do there really isn't much crossover (till they had a cross over) Basically it was about 3 students who did odd jobs around their high school, and the people they helped.
Gundam recommend all
, and if you need any kind of explanation as to what Gundam is your anime watching is limited to the crap dubs cartoon network puts out only then.
Mecha, Sci-fi Has one of the most tragic heroes that I can think of. Guy tries to do the right thing only to end up like most of Shakespeare's tragic heros. I loved the series honestly I found it was extremely well done, had characters you could like, had a character that loved Pizza Hut, and most of all had mechas
Those are just a few I could think of off the top of my head as I've seen MANY, and many of which are kinda blurry in my memory as they are so generic its not funny as I've seen well over 1500(at last count 99% of which were watched on the clock at work
